Grinding: GG’s Smoky Salmon Cucumber Cups


When I reroll, I always want snacks that are easy at the ready and not hard to make. I am an easy-peasy-lemon-breezy kinda gal — especially when running through Elwynn forest for the gazillionth time. These little snacks are so good!!! Easy to make and tasty as all get out, I will nosh these all day long.

They are also great for parties (look fancy), and you can take the fill and slab on bread for a sandwich or just to eat on its own.

5 cucumbers (recommend English or Lebanese cucumber)

8 ozs smoked salmon (finely shredded or diced)

12 cup sour cream

1 garlic clove (crushed finely minced)

1 tbsp mint (chopped)

1 tbsp dill (snipped)

1 tbsp lime juice

salt and pepper

dill (extra to garnish)


1. Peel and finely dice one cucumber, place into a bowl.

2. Cut remaining cucumbers into 3/4 inch slices and, using a melon baller or teaspoon, scoop out seeds and leave a base to form a cup.

3. Add remaining ingredients to diced cucumber and mix well.

4. Season to taste.

5. Fill each cup with salmon mixture, top with extra dill and serve.
