I always wondered where the mint in Gamer.Girlie‘s Honeymint Tea came from. I searched high and low all over Pandaria for this elusive mint, but couldn’t find it.
Maybe Moogyver-Spare Parts inspired me in my sleep, but I suddenly realized the mint was where I wasn’t looking, IN THE TEA. Yes, a bit of reverse engineering and voila! Took the tea out of the mint, distilled as it was, but just in time for this ‘Green’ holiday coming up. A ‘minty’ strawberry cheesecake, food coloring optional.
You guys are on your own for the berries. Hehe.

Ingredients – Cake
24oz. Cream cheese, softened
14oz. Condensed milk
3 Fresh eggs, room temp
1 tsp Peppermint extract
1 Ready-made graham cracker pie crust
1 tsp Green food coloring (optional)
Ingredients – Strawberry Topping
2 cups Strawberries, roughly chopped
1/3 cup Sugar
1 tsp Vanilla or Peppermint extract
1 Tbsp Cornstarch
2 Tbsp Cool water
Preheat oven to 325 with a pan of water in the bottom.
In a large mixer, beat cream cheese until it is fluffy. Mix in, one at a time, the condensed milk, the eggs, the peppermint, and the optional food coloring.
Pour filling into the pie crust and bake for 1 hour. Cake should be firm but not completely set. A little jiggle in the center is alright.
Allow to cool completely at room temp. Overnight is best.
In a medium pot, boil the strawberries with just enough water to cover them. Mix in the sugar and the extract.
Prepare the slurry by mixing in a small bowl, the cornstarch and cool water. Add the slurry to the boiling strawberries and mix well. Boil 2 more minutes and remove from heat. Set to chill in refrigerator until quite cool.
Slice cheesecake into wedges and garnish with strawberry topping. Add a few fresh mint leaves for pizazz if desired.
